Cashew Salad

It is going to be terribly cold here today so I'm still doing the soup thing, but adding a little salad on the side. I have some cashews left over from yesterday so am making a cashew Thai salad with them.  You can use what ever dressing you like on them, but I made a simple rice wine vinegar one that has Thai tastes. 


1 English cucumber (Seedless)
1/4 cup of fresh parsley
6 green onions
Handful cashews

Quarter and chop your cucumber and add to its own bowl. Chop your green onions and parsley; add the cashews. Set aside for dressing later. 

Sweet Chili Thai Dressing

½ cup rice wine vinegar
6 tbs. sugar
½ tsp. garlic powder
½ tsp. powdered ginger
3 tbs. peanut butter
1 tbs. soy sauce
½ water
½ tsp. red pepper flakes (add more or less to your taste)

Put all of the ingredients in a mason jar and shake well.

Will keep up to 2 weeks in the refrigerator.
