Beef and Macaroni Soup



When I was growing up my mother fixed something similar to this and we called it goulash.  It was not a soup and much thicker, but sure tasted a lot like it.  Soup or a casserole, it is a good memory and sure extends that ground beef into a healthy meal.


1 pound lean ground beef
½ cup onion
2 cloves garlic
6 cups beef broth
1 quart canned tomatoes
3 teaspoons Worcestershire sauce
2 tablespoons brown sugar
1 tsp. dried basil
½ tsp. oregano
3 cups cooked macaroni
Kosher salt and pepper to taste

Dice your onions and garlic and set aside.

Cook your macaroni until it is done.  Do not over cook it.  Follow the directions on the package.

In a large sauce soup pot, brown your ground beef, onion and garlic until ground beef is no longer pink. Season with salt and pepper while browning.  Drain off any grease.

Add broth, tomatoes (take each tomato and squeeze it with your hand to break them up),Worcestershire, brown sugar, oregano and basil. Bring to slight boil over medium heat, stirring occasionally. Reduce heat and simmer for 10 minutes letting the tomatoes break down more. Add cooked macaroni and heat through and serve.

This will satisfy you on a cold winter’s night.

  1. I just want to thank you for this recipe. I made this soup tonight and it was very good. I did add a few things to it, however, which were a splash of salsa, some Montreal steak spice, and some roasted garlic and peppers seasoning. I will definitely be making this soup again!
