Homemade Ice Cream Pops



It is getting hot.  My favorite dessert when it is hot is ice cream.  Do you make your own ice cream?  If you don’t, thought I’d share a way to make your own ice cream pops.
To make home made pops you only need 5 ounce Dixie cups and plastic spoons.  Kids will love making them with you.  It is like making a sundae in a cup and freezing them for a sundae on a stick.
I make a quick microwave cashew brittle for Christmas every year that I’ll share with you for the brittle.  You can make it with your favorite nut.  It would be good with peanuts, macadamia nuts or pecans.

Making the pops is simply layering the crushed brittle, ice cream, peanut butter, more ice cream and top with another layer of brittle.  Insert the plastic spoon “stick” and freeze until the ice cream set.

When you are ready to serve, simply peel away the Dixie cup. These individual treats are a great summer time frozen treat.  The pops are prepared in advance, so the kids can reach in the freezer and help themselves.

Crushed brittle
5 ounce paper cups
Vanilla ice cream
Smooth or crunchy peanut butter
Plastic spoons or wooden sticks
Crush your brittle in a baggie by pounding it and spoon 1 tablespoon of the brittle into each paper cup.  Pack in soft ice cream to almost half full.  Layer 1 tablespoon of the peanut butter, then additional soft ice cream, and cashew brittle on top.  Pack each down firmly with the back of a spoon so there are no air bubbles.
Insert a plastic spoon or wooden stick (you can get them in craft departments) into each cup. Freeze them until they are firm.
To serve, peel off cups.  Enjoy the pop on a stick!  

Variations: 
Add a layer of melted chocolate chips with each layer of peanut butter in the above recipe.
Or
Make it a mud slide with a layer of nutty brownies, ice cream, and melted chocolate.
Or
Make it with mint ice cream and layer with crushed Andes candies and melted chocolate
Or
Make it with strawberry ice cream and layer with strawberries and melted chocolate.  You can also crush up a sugar cone and sprinkle it as a layer between the ice cream layers.
Or
Make it with layered chocolate ice cream, caramel sauce, pecans and melted chocolate for a turtle pop.
Or
Make a S’mores pop with layered melted chocolate, melted marshmallow or marshmallow in a jar, crushed graham crackers, and vanilla ice cream.
What combinations sound good to you?  Make it your own with your favorite ice cream, crushed candy bars or candies and toppings.
I have fallen in love with my bacon brittle recipe (see earlier blog). I see that as a layer with chocolate and vanilla ice cream making a pig pop.  Maybe even after it is frozen, remove it from the cup and dip it in melted chocolate and refreeze so it is chocolate coated and once frozen place in a baggie to store (if they last that long).  I just saw an article that Burger King has released their bacon sundae nation wide. Think theirs has caramel also.  Looks great to me.

1 cup cashew nut halves
1 cup sugar
1/2 cup corn syrup
1/8 tsp. salt
1 tsp. butter
1 tsp. baking soda
1 tsp. vanilla

In a 1 ½  quart microwave safe dish stir together sugar, syrup, salt and nuts. Microwave on high 4 minutes. Stir well. Microwave 4 minutes more. Stir in butter and vanilla, microwave for 2 minutes longer.
Add baking soda and stir until light and foamy. Immediately pour onto a silt pad and spreading out thin. Cool.
