Chex Fall Caramel Mix


Each season I like to make a mix appropriate to the season.  This is my Fall Mix idea.


.Chex Fall Caramel Mix  

1 small box of Rice Chex Cereal (You can use any Chex Cereal)
1 cup of butter
1 cup of brown sugar
¼ cup Karo corn syrup
Pinch of Kosher salt
½ tsp vanilla
½ tsp baking soda
6 oz. caramel pop corn
½ of 9 oz. can of cashew halves  
½ bag of 12 oz. M & M’s

Melt the butter in a sauce pan. Add the brown sugar and bring to a full boil.  Add the Karo syrup, salt, vanilla and baking soda.  It will double in size with the adding of the baking soda.  Put the cereal in a large bowl and pour the mixture over the cereal mixing gently.

Pour out onto parchment paper to cool.  Once the caramel Chex have cooled add the caramel corn (I just used a half of a 12 oz. store bought kind to save work).  Add ½ a can of cashews and ½ bag of the Fall colored M & M’s. 

Break apart any that are stuck together and store your mix in baggies.   It makes a great treat, gift or snack to take to a party.  

You can play with your favorite snack goodies you would like to add.  Maybe raisins, candy corn, peanuts, pretzels, etc.  A caramel apple mix would be really good by using the caramel Chex mix, dried apples and nuts.
