Honey Nut Oat Pancakes

It is the weekend which means you can fix a warm breakfast for the whole family.  How about pancakes?




These pancakes are not only delicious but good for you.  Serve them with syrup or honey on the side.

½ cup whole wheat flour
1 cup flour
¾ cup rolled oats
¼ cup honey
2 tablespoons baking powder
1 egg
2 teaspoons vanilla flavoring
2 tablespoons oil
1½  cup buttermilk
½ cup walnut pieces + extra for garnish
Butter

Mix all ingredients with a spoon and fold in walnuts.  This will be a thick batter. You won’t be able to pour it.   I dip it with a ¼ cup measuring cup for each pancake.  Heat your cast iron skillet, add a pat of butter.  Flip them when you see lots of bubbles.  Sprinkle with a few walnuts when you serve.  The recipe will make about 10 pancakes if you use the ¼ cup to measure.
