Chicken Cordon Bleu Casserole






If you have any left over chicken and ham from yesterdays recipe, this is a great spin off on Chicken Cordon Blue by making it in a casserole.  Note that I've added a littler turmeric for good health to off set the half and half (wish it worked that way). 

Chicken Cordon Bleu Casserole

12 oz. penne or ziti pasta
2 cups half and half
8 oz. cream cheese
1/2 tsp. onion powder
1/2 tsp. garlic powder
1 tsp. yellow mustard
1 tsp. turmeric
1 1/2 cup shredded Swiss cheese
2 chicken breasts cooked and cut into pieces
3/4 cup bacon
3/4 cup diced ham
Bread crumbs for topping

Cook pasta according to its package’s directions, drain and set aside.

Cook bacon and chop into small pieces and set aside.

I'm using a package of cubed ham so no work for me.  You can cut up your ham if it is not already chopped.  I’m also using the pre-cooked bacon so just put in the microwave for 30 seconds and then cutting it up with a kitchen scissors.  You can fry or bake it; however you make yours.  I like mine crispy.

In a large skillet, heat cream cheese over medium low heat until melted. Stir in half and half and stir until completely combined with cream cheese.

Season cream cheese mixture with onion powder, garlic powder and salt to taste (You may use minced garlic instead if you like). Taste and season more if you think necessary.

Stir 1 cup of cheese until mixture consistency is smooth.

Spray 9 × 13 inch baking dish with nonstick spray.

Layer pasta, chicken, bacon and ham. Pour sauce over top. Sprinkle top with 1/2 cup cheese and bread crumbs.


Bake at 350ยบ F for 15 minutes or until heated through and top crust forms.

Serve with a salad and you have a meal that is awesome.  This also makes a great pot luck dish to take to a pot luck.
