Heirloom Tomato Salad

I have some beautiful heirloom tomatoes from my little garden that I’m using to make an heirloom tomato salad with.  You can toss in what ever you like, but I’m going with sweet watermelon and a little heat with radishes (lots of color).  You can use what ever cheese you like.

Heirloom Tomato, Watermelon Salad

Seedless watermelon wedges
Assorted heirloom tomato slices
Radish slices
Red onion or shallots
Fresh basil
Red wine vinegar or balsamic vinegar
Olive oil
Kosher salt
Black pepper
Ricotta cheese or feta

Cut your watermelon into bite sized wedges.  Slice your radishes and tomatoes.  Slice your onion or shallots paper thin.  Chop your fresh basil.

Shake your olive oil and vinegar together in a mason jar.  Pick your favorite vinegar and use 1 part vinegar to 3 parts oil, salt and pepper to taste.  If you would like the dressing a little sweeter you can add a little honey.

Mix all salad ingredients ahead of time and marinate in the salad dressing in the refrigerator.  Taste for seasoning again and add salt or pepper if needed.  Gently toss in crumbled cheese of your choice before serving.

Isn't it beautiful?  It just screams summer.

Have a great day, be happy and may God bless you and yours.
