Here is an idea for Sunday brunch on Grandparents Day.
Breakfast Pie
Frozen pie crust
10 to 12 slices bacon
1 small finely chopped onion
8 large beaten eggs
1 bag of frozen hash brown potatoes
2 cups grated sharp cheddar or cheese of your choice
1/2 teaspoon pepper
1 teaspoon salt
Preheat oven to 350°F.
Sauté your onions until they are translucent. Let cool before you add them to the eggs.
Line pie pan with your thawed pie pastry. Brush the bottom and sides of the pie shell with egg white to help prevent a soggy crust.
Combine eggs with the thawed hash browns, cheese, onion,
salt and pepper. Pour into prepared pie crust spreading mixture and piling into the center.
Lay down the lattice of bacon on top.
Bake until center is set and the bacon is crispy (about 45 minutes).
Variation: If you do not want to fuss with the lattice,
just prebake the bacon, crumble it and toss it in the egg mixture. You can also use turkey bacon if you like.
You can also skip the bacon and go with browned sausage,
adding it to the egg mixture. I’d add a
½ tsp. of ground sage if I went with the sausage. They go very well together.
