Dairy Free and Gluten Free Easter Candy



Using a mold I got with Jello Gigglers promotion, I'm making Dairy Free and Gluten Free Easter Peanut Butter filled Easter candy.

1 bag of dairy free chocolate chips
1/2 cup of peanut butter
1/2 cup of powdered sugar
1 Tsp. white corn syrup

Melt your chocolate chips in a double boiler.  Spray your mold lightly with a dairy free oil spray.  I used canola spray.  Using a brush, brush the melted chocolate into your molds.  Put in the freezer for 5 minutes and then coat again with chocolate.  Let harden again in the freezer and then fill the molded chocolate with your peanut butter mixture leaving room for a bottom coating.  You can coat the bottom right away and do not have to let PB mixture harden.  Put in freezer one more time to harden and then put one more coat on the bottom and put back in freezer.  When it is hard, they should just pop out.  I wrapped in plastic wrap and tied with a small ribbon.

I have been developing quite a long list of recipes that are dairy free/gluten free and think I will be doing a chapter of them later on for anyone that would like them.  The nice think about eating out of your garden, your produce is gluten free, dairy free and not processed.  Another good reason to have a garden.
